第十二堂課Canapes&Savouries都算是餐前的finger food

差別在於canapes一定要是冷盤,且一定要具有基底,主體和裝飾三樣,而Savouries就屬於熱的前菜

這樣說比較模糊,先介紹canapes

一.Tartar of salmon on cucumber(圖上)

base:小黃瓜 body:salmon garnish:dill(蒔蘿)

準備:70克鮭魚、一支青蔥、一湯匙檸檬汁、1茶匙時蘿、半茶匙酸豆、一湯匙橄欖油、小黃瓜、鹽和胡椒

1.鮭魚去皮並取掉黑色部分後切小塊

2.加入切塊的青蔥,酸豆,檸檬汁,橄欖油和時蘿後加入鹽和胡椒調味

3.小黃瓜切片後鋪上鮭魚並用蒔蘿裝飾

TIPS:要注意鮭魚的保鮮,檸檬汁可以熟化鮭魚,所以試吃後再斟酌加一點檸檬汁

結論:很經典的一道party finger food,多試做更可以掌握味道喔

二.Hummus piped on Melba toast(圖下)

hummus是指豆泥 base:toast body:hummus garnish:chorizo西班牙辣香腸

準備:吐司,西班牙辣香腸,200克鷹嘴豆(雞豆),25毫升檸檬汁,15毫升芝麻糊tahini,2瓣烤過的大蒜,1/4茶匙鹽,20克奶油

1.吐司烤過後去邊切半後將另一半再烤過,切成一口大小的方形或圓形

2.煎西班牙辣香腸至焦脆

3.混合鷹嘴豆,鷹嘴豆的汁,烤過的大蒜,檸檬汁,芝麻糊,奶油和鹽,用調理機打成泥狀

4.用擠花袋擠到吐司上

5.用西班牙辣香腸裝飾

TIPS:Hummus不要加過多的汁液,打綿密一點,吐司和香腸要酥脆

結論:我很喜歡這道開胃菜,好看又好吃

Recipe 4:Tartar of salmon on cucumber

Ingredients:

  • 70g salmon fillet1 shallot1 tbsp lemon juice1 tsp dill1/2 tsp baby capers1 tbsp Extra virgin olive oilsalt peppercucumber

Method:

Step 1

  • Remove skin,bones and blood line from the salmon fillet
  • Finely dice the salmon,brunoise style
  • Add diced shallot,capers,lemon juice,olive oil and dill
  • Season with salt and pepper
  • Taste and adjust seasoning,it may need more lemon juice
  • Slice the cucumber into 4 mm round slices
  • Spoon a small amount of the tartar onto the cucumber slices and garnish with a sprig of dill

Recipe 5: Hummus piped on Melba Toast

Ingredients:

  • 1 sliced white bread4 slices chorizo sausage200g chickpeas20ml liquid from can of chickpeas25ml lemon juice15ml tahini2cloves roasted garlic1/4 tsp salt20g butter

Method:

Step 1

  • Place the bread on a tray or salamander and toast golden brown on both sides and slice half
  • Cut into triangles
  • Toast the sausage until crisp
  • Blend chick peas with  roasted garlic,lemon juice,tahini,butter  and salt
  • Pipe hummus on each piece of toast,garnish with a slice of chorizo and a piece of picked flat leaf parsely

 

Savouries

一.Spinach and Feta cheese triangles

準備:30克菠菜、20克Feta cheese、15克洋蔥、一張薄酥皮、20毫升奶油、鹽和胡椒

1.菠菜乾煸過後,將水分擰乾,切末

2.煸炒洋蔥末

3.混合菠菜,洋蔥和Feta cheese加上鹽和胡椒

4.奶油隔水加熱後取clarified butter(上層的油)

5.將clarified butter塗抹在薄酥皮上並切成六等份

6.將餡料包進酥皮並捲成三角形

7.烤箱用180度烤至酥皮上色

 

TIPS:Feta cheese蠻鹹的,鹽酌量加點即可

 

結論:此做法完全去除菠菜的澀味,相當好吃

 

Summary of Recipes

 

Recipe 1:Spinach and Feta Cheese Triangles

Ingredients:

30g spinach20g Feta cheese15g onionpinch salt and pepper1 sheet Filo pastry

20 ml butter

Method:

Step 1

  • Remove the stalks,wash and roughly chop the spinach
  •  Wilt the spinach in a hot sauté pan
  • Squeeze out the excess moisture
  • Finely diced the onion and sweat
  • Mix spinach,feta and onion together in a bowl,add seasoning and nutmeg

Step 2

  • Brush the filo sheet with clarified butter
  • Cut the sheet across into 6 equal strips

Step 3

  • Fold the triangle parcels
  • Place on a baking tray and bake in a hot oven until golden brown
