第十六堂課Egg cookery,一般大家對挑選雞蛋和儲存應該都很熟悉。這邊分享看美食節目介紹過將松露放在蛋旁邊,之後煮出來的蛋就有松露的香氣囉;同樣的道理,就要避免將蛋和洋蔥及大蒜放一起。

一.Egg Benedict

有沒有很面熟,brunch很常見喔,就是班尼迪克蛋

準備:一塊英式瑪芬、10克奶油、2片火腿、2顆蛋

荷蘭醬:20毫升白醋、2顆蛋黃、100克clarified butter、檸檬汁、胡椒

1.奶油隔水加熱取上方的油(稱為clarified butter)

2.蛋黃加醋隔水加熱攪拌,待白醋收點汁,蛋黃未凝固時,一點一點地加clarified butter

3.並以檸檬汁和胡椒調味

4.將瑪芬切半及火腿烤過

5.起水鍋加6%的白醋(大概2L水對上1湯匙),煮滾後轉中火,將蛋打到碗中,再倒入水鍋中,煮到蛋白凝結,蛋黃還是流動的狀態

6.組合

TIPS:瑪芬要烤到金黃色,水波蛋多練習即可掌握,荷蘭醬是用clarified butter,美乃滋是用食用油

結論:一入口是hollandaise微酸,口感很滑順,瑪芬麵包Q軟,最後火腿的香氣上來。當第一口還沒吃完,

又再咬下一口了

Recipe 1: Egg Benedict

Ingredients:

  • 1 muffin10g butter2 slices ham2 eggs
  • Hollandaise:20ml vinegarpinch white pepper2 egg yolks100g clarified butterLemon juice

Method:

Step 1

  • Make Hollandaise
  • Toast muffin and toast the ham
  • Heat 2 poached egg(vinegar is 6% of water)
  • Butter the muffin and assemble the poached eggs,ham and hollandaise

二.Vegetable Frittata

準備:25克洋蔥30克紅甜椒、30克青椒、30克蘑菇、30克紅蘿蔔、30克櫛瓜、3顆蛋、20毫升鮮奶油、25克parmesan cheese、鹽和胡椒

1.將洋蔥,甜椒,紅蘿蔔,櫛瓜及青椒切丁、蘑菇可切片或切丁

2.洋蔥炒香後加入蔬菜

3.攪拌鮮奶油和蛋,parmesan cheese並調味

4.將炒軟的蔬菜調味後倒入鋁箔餐盒,再倒入蛋和鮮奶油的混合液

5.放入烤箱150度烤約10分鐘

TIPS:烤好後確認蛋是否凝固,若要吃健康點,可將鮮奶油換成牛奶

結論:大勝蒸蛋和三色蛋等蛋料理

 

 

Recipe 3: Vegetable Frittata

Ingredients:

  • 25g onion30g red capsicum30g green capsicum30g mushroom30g carrot30g zucchini3 eggs20ml cream25g parmesan cheesesalt and pepper

Method:

Step 1

  • Dice onions and capsicum
  • Slice mushroom
  •  Saute vegetables

Step2

  • Beat eggs and add cream,parmesan and seasonings
  • Combine the vegetables with the egg mix
  • Pour in mixture into well oiled foil mould
  • Place in oven 150 degree and cook until set, approx 10 minutes

三.Scrambled Eggs on Toast

準備:1片土司、2顆蛋、20毫升鮮奶油、10克奶油、1茶匙蝦夷蔥、鹽和胡椒

1.將吐司兩面烤到金黃後抹奶油

2.將蛋和鮮奶油攪拌並調味後拌炒到鬆軟

3.蝦夷蔥切末灑在碎蛋上

TIPS:吃過麥當勞早餐嗎?將蛋炒到鬆軟即可,不要過熟了

 

Recipe 4: Scrambled Eggs on Toast

Ingredients:

  • 1 Bread slice2 Eggs20ml cream10g butter1 tsp chivessalt and pepperbutter

Method:

Step 1

  • Toast the bread on both sides to a golden brown
  • Break the eggs into a bowl, season and mix thoroughly
  • Heat butter in a pan, add eggs and cook gently, stirring with a wooden spoon
  • Butter the toast, and place on a warm plate
  • Arrange the scrambled eggs on the toast and scatter with the chopped chives
