第十四堂課要正式介紹馬鈴薯,上一篇有提到挑選時要注意品種,一般炸薯條在用的Russets(洛瑟茲)澱粉高,放在水中會浮起來會用在potato gratin

另一種紅皮馬鈴薯糖分高,會沉在水中。尤其是做Gnocchi絕對要選糖分高的,千萬不要用錯馬鈴薯了,做出來會不好吃喔

 

一.Potato Gnocchi

Gnocchi有點像麵疙瘩,但是一樣道地且家常的義大利主食喔!圖中醬汁水分太多

準備:200克紅皮馬鈴薯、半顆蛋黃、鹽和胡椒、65克麵粉、30克parmesan cheese、30克奶油

 拿坡里醬汁:半顆番茄、2湯匙番茄醬、20毫升油、20克洋蔥切末、半顆大蒜切碎、1/4辣椒、40毫升白酒、羅勒、100毫升高湯,鹽和胡椒

1.將馬鈴薯用鋁箔紙包起來放烤箱,180度烤到熟(用煮的水分太多)

2.烤好的馬鈴薯去皮後壓泥

3.加入麵粉和蛋黃後調味並揉捏到平滑

4.切成易入口的小球並用叉子劃一下表面(容易入味)

5.番茄切丁,大蒜和洋蔥切末後炒香洋蔥加入大蒜,羅勒和辣椒

6.加入兩湯匙番茄醬炒至鮮紅色後加入白酒和高湯收汁,用鹽和胡椒調味

7.起鍋加兩大匙鹽煮Gnocchi,將煮好的Gnocchi加入拿坡里醬汁

8.起鍋加parmesan cheese粉和羅勒葉裝飾

TIPS:在揉捏Gnocchi時不要揉捏太大力也不要太久,煮的時候浮起來即可撈起

結論:自己做新鮮的Gnocchi比市面上賣的會好吃許多,如果有機會去義大利不妨到餐廳嚐看看道地的Gnocchi

Recipe 5:Potato Gnocchi with Tomato basil sauce

Ingredients:

  • 200g potato1/2 egg yolk salt and nutmeg65g flour30g parmesan30g butter

Sauce:1/2 tomato2tbsp tomato paste20ml oil20g diced onion1/2 crushed garlic1/4 chilli40ml white wine basil100ml veg stocksalt and pepper

Method:

Steps  1

  • Wrap the potato in foil and bake in oven(180 degree) until soft
  • Peel potato, place potato through a ricer
  • Add flour and  egg mix then season with salt and nutmeg
  • Mould mixture into small balls,dusting lightly with flour,make one side with a fork
  • Place into boiling salted water
  • Dice a quarter of tomato
  • Saute the onion in oil and add garlic,basil and chilli
  • Add 2 tbsp tomato paste and white wine ,100ml stock and salt and pepper
  • Add heated gnocchi and stir through the basil
  • Garnish with grated parmesan cheese and basil leaves

 

二.Croquette potatoes&Pomme Dauphine

Croquette是圖中長條型,Dauphine是圓形,兩樣都是有基本的Duches poatatoes衍伸出來的料理

準備:Duches:1公斤紅皮馬鈴薯兩顆蛋黃、鹽和胡椒

         Croquette:1/5 duches potato(上方半成品)、麵粉、蛋液(可混和牛奶)、麵包粉、parsley切碎(可有可無)

         Dauphine:1/5 duches potato(上方半成品)、60毫升水、20克奶油、40克麵粉、一顆蛋

1.起鍋加兩大湯匙鹽煮馬鈴薯,煮完瀝乾,去皮切塊送烤箱烤150度15分鐘(去除水分)

2.將馬鈴薯壓泥加入蛋黃並調味,混合即可

3. Croquette:將上方的Duches馬鈴薯團塑造成橢圓形長條約5*2cm

4.將 Croquette沾麵粉後刷蛋液(可加牛奶)再裹上麵包粉

5.起油鍋185度,炸到金黃

6.Dauphine:將上方的Duches馬鈴薯團加入半分的choux paste(duches:choux=2:1)

7.Choux paste:將奶油混入水中加熱,煮沸後加入麵粉攪拌,再逐次加入蛋液攪拌

8.這是Dauphine大概像麵糊一樣,用湯匙塑形成圓形後油炸

TIPS:煮好的馬鈴薯記得要烤過,其他比例抓對,油溫抓對,不太會出差錯

結論:雖然作法有點繁複,但是蠻值得試試看的喔

Recipe 1: Duchess Potatoes

Ingredients:

  • 1 kg  potato2 egg yolkssalt pepper

Method:

Step 1

  • Cook potatoes in salted water until tender,drain well
  • Transfer potatoes to an oven tray and dry in oven 150 degree,for 10-15 minutes
  • Pass the potatoes through a ricer to make a puree
  • Add egg yolks one at a time and mix in well and season it

Step 2

  • Pour the oil on the tray and put the duchess potato mixture in a piping bag with a large star nozzle.
  • Pipe on to a lightly greased baking tray in a spriral shape approx 5cm high and 3 cm in base diameter
  • Lightly spray with Canola oil and place in oven 200 degree until golden brown, crispy and hot

Recipe 2:Croquette potatoes

Ingredients:

  • 1/5 Duchess potato mixtureflouregg washbreadcrumbschopped parsley

Method:

Step 1

  • Shape the Duchess mixture into a long cylinder,and  cut into 5*2 cm
  • Run through the flour then put in the egg and milk wash then breadcrums

 Place into fryer basket in a preheated fryer of 185 degree until golden brown

 

Recipe 3:Pomme Dauphine

Ingredients:

  • 1/5 duchess potato mixture60ml water20g butter40g flour1 egg

Method:

Step 1

  • Choux paste:heat the water and butter in a pan.When it comes to the boil,take off the heat add the flour all at once and stir well
  • Add the eggs little by little
  • Add 2 parts duchess to 1 part choux.Mix well
  • Shape into round balls onto a greased paper
  • Slide into the deep fryer 180 degree until golden brown and cookes through.

三.Potato Gratin

準備:2顆waxy馬鈴薯(Russets)、20克奶油、1瓣大蒜、一茶匙麵粉、100毫升鮮奶油、100毫升牛奶、20克parmesan cheese、鹽和胡椒

1.烤箱預熱到180度

2.將馬鈴薯切薄片

3.將鋁盒抹上油鋪上一層馬鈴薯片,再鋪一層大蒜片,上面再鋪一層馬鈴薯片並灑上鹽和胡椒

4.調和麵粉,鮮奶油,熱牛奶後倒入鋁盒蓋過馬鈴薯

5.灑上parmesan cheese並蓋上鋁箔紙,烤180度1小時

TIPS:醬汁要加熱牛奶喔

結論:醬汁學起來就可以應用來烤別的食材了,我覺得茄子也很適合

 

 


Recipe 2:Potato Gratin

Ingredients:

  • 2 potatoes20g butter1 clove garlicnutmeg1tsp flour100ml cream100ml milk20g grated parmesan cheesesalt and pepper

Method:

Step 1

  • Preheat oven to 180 degree
  • Slice the potatoes very thin
  • Butter a foil container.Put potato slices in a dish overlapping layers,adding some sliced garlic and seasoning between the layers and add salt and pepper
  • Mix flour with the cream and add to the hot milk then pour over the potatoes.
  • Sprinkle cheese over the top then bake in the oven for 180 degree and 1 hour
