第九堂課Baking(烘培) and Grilling(烤),因為這堂課做得剛好是一個set,所以都介紹給大家

一.Pommes Gratinee'

準備:一顆大馬鈴薯 10克奶油 15克洋蔥 15克培根 10克切達起司 青蔥

1.馬鈴薯烤箱180度烤1小時,放上層

2.洋蔥和培根切末並用奶油小火煎到香味出來後加鹽和胡椒

3.將馬鈴薯橫切1/5當蓋子,並將馬鈴薯挖空拌洋蔥和培根並在上方灑上起司

4.放於烤箱烤至起司融化

5.切青蔥裝飾

TIPS:洋蔥切末,煎好後油瀝掉

結論:馬鈴薯香氣配上洋蔥和培根應該很好想像,作法也很好掌握,當前菜

 

 

Recipe 6:Prommes Gratinee’

Ingredients:

  • 1 large potato10g butter15g onion15g bacon10g cheddar cheese2 spring onion

Method:

Step 1

  • Bake potato in oven at 180 degree until soft about 1 hour
  • Saute’ brunoise of onion and bacon until light brown colour and add salt and pepper
  • Cut a lid out of the potato and scoop out flesh.Mix with onion and bacon
  • Place this mixture back into the potato shell and sprinkle cheese over it and gratinate’ under salamander or hot oven
  • Garnish with chopped spring onion

二.Fish wrapped in Filo Pastry

filo pastry酥皮,超市都買得到

準備:20克紅蘿蔔 20克韭蔥 20克洋蔥 100克魚排 二,三張酥皮紙 20克奶油 香菜葉

1.將紅蘿蔔和韭蔥及洋蔥切絲

2.將洋蔥用奶油煎到出水後炒紅蘿蔔和韭蔥並加鹽和胡椒調味

3.煎好後取出用餐巾紙吸收多餘的油

4.酥皮疊好抹奶油,抹日字型,並放上魚排,上方舖上蔬菜後捲起

5.酥皮上下再抹上奶油後放在烤盤上烘烤200度至上色

TIPS:蔬菜要切細,大小一致.放烤箱時要放上層,底部才不會燒焦

結論:我很喜歡這道菜,蔬菜很甜有水分可補充魚的乾澀,所以若魚較不油,蔬菜一定要多一點,搭上酥皮怎能不愛

 

 

Recipe 2:Fish wrapped in Filo Pastry

Ingredients:

  • 20g carrot20g onion20g leek100g fish fillet3sheets filo pastry20g butter(melted)Fresh coriander leaves

Method:

Step 1

  • Cut carrot,leek into julienne and onion into fine slice
  • Sweat onions and put carrot and leek then add salt and pepper
  • Take them out on paper towel to absorb extra moisture
  • Brush pastry with melted butter. Wrap fish and vegetables in pastry and brush with butter
  • Bake in a hot oven at 200 degree until golden brown
  • Cut half and serve hot

三.Sirloin steak and Grill Zucchini and Eggplant

這兩道是要用鐵盤烤

準備:180克沙朗牛排,5ml油 鹽和胡椒 櫛瓜和茄子

1.將沙朗筋的部分取掉

2.抹上油和鹽 胡椒

3.加熱烤盤後煎牛排,一面煎約3分鐘

4.將牛排放置在溫的盤子上靜置

TIPS:如果喜歡medium第一面可烤5分鐘,原則上按壓一下肉的硬度


結論:很想買烤盤,只要放在瓦斯爐上就可以烤出漂亮的牛排和蔬菜

        牛排我喜歡medium rare,中間帶血色,若是medium中間帶粉紅色

        第一次吃到櫛瓜,就是一般瓜類的味道,也沒什麼驚喜


Recipe 4:Sirloin Steak

Ingredients:

  • 180g sirloin steak5ml oilsalt and pepper

Method:

Step 1

  • Trim sirloin steak, removing vein from the skin
  • Heat a grill plate
  • Rub the steak with oil, salt and pepper then grill on the plate for 3 min each side
  • Remove from the heat and rest the steak in a warm place for 5 minutes
  • Serve on a warm plate

Recipe 5:Zucchini & Eggplant

Ingredients:

  • A zucchinian eggplant10ml oilsalt and pepper

Method:

Step 1

  • Slice into 1cm slices
  • Heat a grill plate
  • Rub the vegetables  with oil, salt and pepper then grill on the plate
  • Cook until tender but still holding its shape

四.Cre'me Caramel(焦糖蛋奶)

準備:60克砂糖(做焦糖caramel) 45ml水 250ml牛奶 2顆蛋 另外25克砂糖做蛋奶 香草精

1.燒45ml的水並在鍋邊刷水,加60克的糖,煮到成焦糖色

2.加熱牛奶和一小滴香草精

3.將蛋液和25克砂糖攪拌後一點點地加熱牛奶拌勻

4.將焦糖倒入容器中

5.焦糖凝結後,蛋奶倒入容器

6.放置於烤盤,並在烤盤加一半高度的熱水(接近煮沸)

7.蓋上鋁箔紙(亮面朝上)放入烤箱,烤160度30分鐘

8.取出待冷卻後放冰箱

TIPS:烤盤加熱水可讓蛋奶烤起來滑嫩,且不可以煮沸,加鋁箔紙可避免表面乾硬

           香草精不要加多,大概是流目油的量

結論:這次做得蛋奶很綿密,真的很好吃喔,我不喜歡焦糖色,其實白色也蠻漂亮的,但正確版要像布丁一樣

 

Summary of Recipes

Recipe 1: Crème Caramel

Ingredients:

60g sugar45 ml water250 ml milk2 eggs25g sugarVanilla Essence

Method:

Step 1

  • Heat 60g sugar with 30ml of water in a pan to make a caramel
  • Boil the caramel till the golden brown colour

Step 2

  • Heat milk and vanilla essence in a pan to nearly boiling 
  • Mix eggs and sugar in a bowl then add hot milk bit by bit
  • Pour the caramel into metal moulds and place in the fridge

Step 3

  • Pour the eggs and milk mix over the caramel and place moulds into a baking dish
  • Fill baking dish1/2-3/4 with hot water
  • Cover with foil to prevent drying the top of pudding during the cooking process

Step 4

  • Cook in a pre-heated oven,approx 160 degree for approx 30 minutes until the custard has set
  • Remove from the oven and place custards into fridge to cool
  • Turn the custard out with caution
